Quinoa and Bean Salad

Ah yes, a beautiful sight this is!
I love love love Quinoa. I also love black beans. So this, along with a few other yummy ingredients make for a lovely side dish for some grilled chicken or fish or all on it's own since it is packed with protein.

1 cup quinoa, cook and cool as per package directions.
1/2 can kidney beans, rinsed and drained
1/2 can black beans, rinsed and drained
1 small can of peaches and cream corn, rinsed and drained
1/4 bell pepper, your choice of colour, finely diced
1/4 small red onion, finely diced

Toss this all in bowl and add,
2 Tbsp Balsamic vinegar
4 Tbsp lemon juice
1 small handful of cilantro, chopped or a good squirt of cilantro paste
1 tsp cumin
2 Tbsp EVOO (Extra Virgin Olive Oil)
Salt and Pepper, to taste.

Place in air tight container and place in your refrigerator for an hour or so. Stir and serve! This will be fine, and possibly taste better the next day. If it last's that long! 😉
