Black Bean Brownies



Not only is my sister an amazing artist, she can also cook! I really wish we lived closer to one another. We would have so much fun. Her husband, who is also a pretty great artist, has Celiac Disease. Being the awesome wife she is, Chrissie has found some lovely recipes. This is one of them. You don't have to be gluten free to enjoy these fudgey babies!

1- 19oz can of black beans, drained and rinsed
1/2 cup sugar
1/4 cup cocoa powder
1 tsp vanilla
2 eggs

1/2 cup chocolate chips *optional

Preheat oven to 350F.
Place everything but the chocolate chips in a good blender, or a food processor.
Blend till smooth. Stir in Chocolate chips and pour into a greased or parchment lined 8x8 cake pan.
*I use a 6x6 Pirex dish and spray with cooking spray and line with parchment*
Bake for 30 minutes. 
Let cool completely and remove from baking dish and cut into squares.

Perfect with some whipped cream or a little powdered sugar! High in protein as well!
