Biscuits

Biscuits are very versatile. Some people like them with raisins, some with cheddar. You can add berries and nuts, top with coarse sugar. You can cut them in squares, triangles, use a circle cutter or a juice glass! My choice today was basic. Nothing added. Great for stew or soup or butter and jam. Here's what you will need to make them:

2 cups flour, all purpose
3 1/2 tsp baking powder
1/2 tsp salt
1/3 cup sugar
1/2 cup shortening
1 cup milk

Preheat oven to 425F

Line a baking sheet with parchment.
In medium bowl, add flour, baking powder, salt and sugar. Stir.
With a pastry blender, or your hands, cut in shortening.
When it resembles small peas, add milk. Stir.
*I like to use a butter knife*


Flour counter top or large cutting board. Dump mixture out and knead a little. Adding more flour if required but you do want a fairly soft dough here.


Pat down with hands to about 1/4 inch thickness. If you want them thicker, go ahead.
Cut out in circles and place on baking sheet.

 As you can see, my cutter was fairly large. 
I should have only made 6 or 8 with this size and they would have been higher.
Bake for 12-15 minutes.
