Banana Bread Bread Pudding
4 cups of day old Banana bread, cubed
3 eggs
2.5 cups Milk
¼ cup Brown Sugar
½ tsp Watkins Baking Vanilla Extract
½ tsp Watkins Pumpkin Spice or Chia Gourmet Extract

Preheat oven to 350F.

Place banana bread cubes on a sheet pan and dry
out for 5 to 10 minutes in oven.

Whisk eggs, milk, brown sugar and extracts
together in large bowl.
4.
Remove banana bread from oven and toss in bowl
with egg mixture.
5.
Using Watkins Cooking Spray, generously coat a 9
X 13 glass dish.
6.
Pour pudding mixture into pan, bake in preheated
oven for 30 to 40 minutes or until custard is set.
7.
Serve warm or chilled.
Brown Sugar Sauce
2 Tbsp Butter
2 Tbsp AP Flour
½ tsp Salt
½ cup packed Brown Sugar
1 cup boiling water
1 tsp Watkins Baking Vanilla Extract

In a medium saucepan, melt butter. Add flour and
salt; stir until smooth.

Stir in brown sugar. Blend thoroughly and cook
over medium heat, stirring constantly, until mixture bubbles and is lightly
browned, about 5 minutes. Remove from heat.
3.
Stir in boiling water. Return to heat and bring
to a boil, stirring constantly, until smooth and thickened. Add vanilla extract
and stir until well blended. Pour hot sauce generously over Bread pudding!
