Breakfast Frittata!

Good Morning!
It's been a long 2 weeks and busy busy busy. I had a great shift back at work. Happy to be home!
I made a wonderful Breakfast Frittata today for hubby and I. Thought I'd share it with all of you!

INGREDIENTS:

4 small breakfast sausages, casings removed
1 small onion, chopped
1 garlic clove, minced
6 button mushrooms, sliced
1 large white potato, shredded
4 eggs, beaten
1 cup cheese, your choice, shredded
salt
pepper

METHOD:

Heat frying pan over medium heat, Add 1 tsp Olive oil or some cooking spray.
Too in breakfast sausage, breaking up with a fork or spoon.
Fry for about 2 minutes. Add onion and garlic and mushrooms. Continue to cook and stir around for about another 2 or 3 minutes. Add shredded potato. Toss around till golden.

Heat oven broiler.





Pour beaten eggs over mash hash and sprinkle with salt and pepper.


Place in oven under broiler for 2 minutes until set.


Sprinkle with cheese and return to oven.

Remove from oven and cut into 4!





This should be enough for 4 people if served with toast and fruit but we tend to just share it between the 2 of us! 😉
