Asian Vegetable Noodle "Soup"

I use the word soup lightly. You require a fork, as well as a spoon for this one. If you want this to be a strictly spoon friendly dish, feel free to cut your veggies up bite size.

Soup Base:

2 containers of chicken or vegetable broth (about 2 liters)
1 carrot, chopped
1 onion, chopped
2 inch piece of ginger, cut into 2 or 3 smaller pieces
1 Tbsp sesame oil
1 Tbsp soy sauce
1 tsp fish sauce

Simmer together in medium sized pot on low for about an hour.

After about an hour, taste it. Add more soy sauce if it's not salty enough. A little at a time though. Don't go over board.


While this is simmering, get chopping!
1/4 head of cabbage
1 large carrot
1/2 cup sliced mushrooms
1 can of baby corn, slice how you feel like
green onion
*I used my spiralizer for my cabbage and carrot*


Boil the kettle. 
Place a couple bunches of Cellophane noodles in a deep dish. 
Now, Cellophane noodles are also known as Chinese Vermicelli, bean threads, glass noodles....the list goes on!

These are NOT rice noodles. Fairly longer and are actually made with the starch from green beans and peas. Love love love them! 
After about 5 or 10 minutes in the boiled kettle water, you want to drain and rinse with cold water. Let drain over a bowl.

Check on that broth now.
If the taste is there, remove from heat and strain out vegetables. Discard vegetables and set broth aside.

Okay. So we have our broth and our vegetables.

Place broth back on the heat, bring back to a simmer and add the carrot, cabbage and mushrooms.


Simmer this for 10 minutes or so. Depending on how thin your vegetables are will depend on cooking time here. Just pay attention.
When this is cooked, add in your baby corn and green onion. Bring to a boil.
In a nice bowl, place in a nice amount of those pretty noodles. Ladle over some hot broth and get those vegetables in there! So good.


You can even add tofu or cooked chunks of chicken or some shrimp if you like. If you like bamboo shoots, or have bok choy, go ahead! Like it spicy? Go ahead! Add that hot sauce!! This is just what I had on hand. Be creative. Now, this soup is good for a few days. I store the soup separate from the noodles. I like to be able to decide if I want to use a spoon or fork or both! 😉😉
